Shichimi Togarashi

Shichimi Togarashi is probably my most favorite Japanese seasoning of all time. It’s great with meats and especially on barbeques. I bought a bottle of it just the other day at the Japanese store downtown and let me say that it’s not exactly cheap. Anyway, I found a recipe online on how to make your own Shichimi Togarashi at home. Since this seasoning is made up of 7 spice blends, you would need to combine these 7 only of course. Here’s the recipe:
Ingredients:
5 tsp chili flakes
3 tsp powdered Szechwan pepper leaves (sansho)
1 tsp of white sesame seeds
1 tsp of black sesame seeds
2 tsp powdered tangerine peel
1/2 tsp white poppy seeds
1/2 tsp brown mustard seeds
Method:
Combine all ingredients other in a mortar and pestle. Give it a good rub with the stick :) Store in an airtight container so that it will remain fresh longer. Preferably, store it in the fridge.
This spice blend is a great rub for meats. Rub some on your beef and bbq it. It is summer after all, so wash it down with some lemonade…mmmh!
