Stir Fried Enoki Noodles
I have some really simple recipe for you that you can do at home. All you need is some minced meat and a packet of enoki mushrooms along with some udon, soba or egg noodles :)
It’s the perfect comfort food that is great for parties or just for your individual meal.
Ingredients:
1 pack of enoki mushroom
1/2 a green onion, sliced
2 garlic cloves, chopped
50 grams of minced meat (pork or chicken)
A handful of bean sprout
A bundle of spaghettini or angel hair pasta, with a diameter of a dime (about the size of 20 sen in RM)
Seasoning:
1 tablespoon oyster sauce
1 teaspoon soy sauce
1 tablespoon rice wine vinegar/mirin
1/2 teaspoon pepper
1/2 teaspoon sesame oil
1/4 cup water
Garnish:
2 Spring Onions, chopped
Method:
1. Cook your spaghettini for 8 mins in boiling water. Drain and washed with cold water to stop cooking completely and set aside.
2. Combine the seasoning together into a bowl. Mix to combine. Set aside.
3. Heat wok/pan with some oil and saute your onions and garlic for 2 mins. Add your minced meat in and saute until meat changes into an opaque white.
4. Add your spaghettini in and stir fry together. Add your seasoning mixture in, bit by bit. Cook for about 3 mins until it simmers.
5. Add your enoki mushrooms in and cooked till the mushroom reaches a soft texture. Add your bean sprouts in and cook again for another 1 minute.
6. Turn off heat and add your chopped spring onions into the noodles and stir to combine. You just want to heat through the spring onions so that the flavors and colors combine :)
7. Serve hot in a bowl. Eat!
This recipe is basically just tossing everything together just very simply, and you would be surprise at how good this tastes. Well, if you want a bit more colour, you can add shredded carrots in. This dish is perfect for pot luck party or a dinner party, you can make it look really impressive with a simple garnish of shredded chilis and julienned spring onions :) This recipe feeds 2, so double/triple/quadruple the recipe for a larger crowd.
